Bramley apples originated in Nottinghamshire and this recipe of Nottingham Apple Batter Pudding is a great way to use them and goes perfectly with a serving of freshly whipped cream.
Pinch of salt
2 eggs, separated
6 Bramley apples, peeled and cored
4 tbsp butter
½ tsp ground cinnamon
200ml whipped cream
1. Preheat the oven to 180C / 350F / Gas 4
2. Sift the flour and salt in a bowl. Beat in the egg yolks and milk
3. Arrange the apples in a deep, greased oven-proof dish
4. Whisk together the butter and sugar and add the cinnamon. Pour the mixture into the apples
5. Whisk the egg whites into soft peak and fold into the batter. Pour over the apples and bake for 1 ¼ hours, until the apples are tender and the batter is risen and golden
6. Serve immediately with a dollop of whipped cream
